Publish My Next Book

My wish is to get my next Greek cookbook up and running, and have a team who can help me put this book together. (Example: Editor, formatter, publisher company, photographer, and so forth.) I have a large amount of family and friends who can help me, but without the funds I can not do much.
My first cookbook was self published by me, and I gave my everything to get the book up and running. It was very difficult for me to do this, but it was a long awaited dream. I paid for everything on my own, without the help of anyone. I am a chef, and food blogger as well as I help my parents with their lavender business where we grow organic lavender and make products. I grew up with the appreciation for organic and fresh herbs and spices.
My next cookbook sole purpose is on the "ancient greek olive tree." I have helped many Greek olive oil companies try to market their olive oil here in the states, but I found one common problem. Greek olive oil isn't seen or heard enough. My plan is to go to Greece this Fall and research olive oil companies, actually walk the olive groves, and plan to document all of my trip so I can write my book. Greeks work very hard to produce olive oil, and I find that they are top #3 largest olive oil producer, but yet need help to export. I want to incorporate recipes that are from ancient Greece, as well as modern day and show that consuming olive oil daily can really be beneficial to the body.
I wish to get my next cookbook up and running by Spring 2017, that way I can spread the word of Greek olive oil. I am also in a way showing the love for my culture and paying respect to Greece, since lately its not getting the respect it should via social media and news.
